Asian Meatballs 

This is a great fast dinner,  that doesn't take very long to make. These pork meatballs have such great flavor. You can use ground chicken and turkey too. You can fry them in a pan or bake them. I like to serve them with stir fry veggies and white rice. 


Pork Meatballs 

2 lbs of ground pork
1 cup plain breadcrumbs or Panko breadcrumbs 
2 eggs 
1 tsp minced garlic 
1 tsp minced/grated ginger OR ground ginger 
2 tablespoons soy sauce 
2 tablespoons minced green onion 
1/3 cup chopped red bell pepper 
1/2 tsp salt and pepper 

Sauce 

1 C Teriyaki sauce ( or favorite Asian Marinade ) 
or you can make your own- with soy sauce and brown sugar . 
1/4 C brown sugar
1/3 C rice vinegar 
2 tsp sesame oil
2 tsp minced or ground ginger 
1tsp garlic powder 
1tsp onion powder
1 tsp Siracha sauce ( or more if you like it spicy ) 

1.Preheat oven to 400* 

2. In a large mixing bowl, mix ( by hand) all ingredients for the meatballs until well incorporated 
Scoop the meat mix,  with a tablespoon, and roll into balls. 
place onto a greased foil lined pan. 
Bake at 400* F for 15-20 min until the meat is cooked thoroughly and no longer pink. 

3.Sauce Instructions: 
Add all ingredients of the sauce, to a large saucepan. Bring to a boil over med/high heat. Cook for about 5 min. Remove from heat.  

4.After removing meatballs from the oven, place them into the large saucepan, and coat with the sauce. 
Serve over rice or stir fry veggies. 

You may garnish with sesame seeds, some more Siracha or sweet chili sauce,  and more green onions.
